Junmai Daiginjo Miyama Nishiki Nakadori 1800ml, 720ml, 300ml
“NAKADORI (Middle Cut)” is the name given to the part of the sake mash with the best balance of aroma and flavour. Made with the sake rice variety Miyama Nishiki cultivated by our own sake rice research society, this is a sake that shows off the best characteristics of the rice: a deep sharp citrus like acidity. A slightly reserved nose lends itself to an expansive rustic flavour. A clean sake with a good balance of acidity that pairs well with all types of food.
Junmai Daiginjo Dakuryu Nama 720ml, 300ml
This soft nigori pours like light white snow. Since the sake is unpasteurised, it has a fresh and expressive taste. The bold and exquisite flavours come from the “King of sake rice”, Yamada Nishiki. This sake is in the ultra premium class of Junmai Daiginjo, which was chosen by ANA International in 2014 to serve the First Class and Business Class passengers. Best to drink without food. Food pairing: sushi and sashimi.
Junmai Daiginjo Shichiseiki 720ml
Shichiseiki, which literally means “Seven Star Flag” is named after the flag that was raised by the 2nd Battalion of Shonai Domain at the Boshin War. It is a blue war flag charged with an inverted Big Dipper (Ursa Major) called HAGUN-SHICHISEI-KI, 破軍七星旗 meaning “defeating the enemy’s seven stars”.
The battalion is said to have many successive wins, and Sakai Genba, who led it, was called “Onigenba”(Genba the Devil) by the new government.
Shichiseiki was born with the desire to preserve the history and climate of the Shonai Domain in the form of sake. This sake uses Yamagata specialty Dewasansan rice which is polished to an amazing 7% ratio.
Junmai Daiginjo Shichiseiki 2016vintage 720ml
Shichiseiki 2016 vintage is brewed with a different liquor design from the previous Shichiseiki, and its flavor is also distinct. Yeast No. 7 is used as the main yeast. In addition to the soft fragrance with no sharpness, the elegant sourness spreads throughout the mouth, and the sweet lingering tenderness comes behind. Among the high-purity pure rice Daiginjo sake by Tatenokawa Brewery, it has a taste that makes you feel the thickness of the core more.
Junmai Daiginjo Kyokgen 720ml
Tatenokawa Junmai Daiginjo Kyokugen with the first ever polishing rate of 8% is a pinnacle achievement in the sake world. This sake is a limited special reserve and the realization of the six-generation owner/brewer master Junpei Sato.
Junmai Daiginjo Komyo Yamada Nishiki 720ml
Groundbreaking sake with 1% polish ratio. In the history of sake, no brewery has ever been able to polish rice down to 1% before. Some people might say, “Do we really need to do this?” The answer of the 6th generation brewer, Jumpei Sato is “Only the brewery which took on this challenge can understand.” Only a brewery which had made the sake with a 1% rice polish ratio, could see the undiscovered world. “Komyo” opens the door to this new frontier and bring rays of hopes to the “future of the world of sake”.
